TOMATO CELERY ORZO SALAD

We eat grape tomatoes like they’re candy in our house. They’re so sweet and delicious in the summer! This orzo salad highlights those little beauties with a crunch of celery and a squeeze of lemon juice. Enjoy this simple tomato celery orzo salad. It’s the perfect BBQ compliment!

This salad gets better with age. Prepare it and refrigerate for entertaining later in the day, or to enjoy throughout the week. Let the flavors meld and the orzo pasta soak in the olive oil and lemon juice dressing.

TOMATO CELERY ORZO SALAD

I use fresh basil in this tomato celery orzo salad, but it would be great with parsley or sage too. Add grilled chicken, steak, or fish for added protein to make it a meal. It’s a great addition to a summer night BBQ of burgers or hot dogs. Or smoked meats if you live in Texas.

Sunburst tomatoes would also be fabulous in this salad. They are by far the sweetest of the small tomatoes I’ve tried! Although they are less common in the grocery store. My neighbor grew them in her garden this year and we love snacking on them. They’re definitely going on my ‘to grow’ list for next year!

This simple tomato celery orzo salad highlights beautiful sweet grape tomatoes with a crunch of celery and a squeeze of lemon juice.

Ingredients

  • 1 c orzo
  • 1 pint grape tomatoes, halved
  • 3 stalks of celery, chopped
  • 1/4 red onion, diced
  • 2 cloves garlic, minced
  • 1/2 lemon, juiced
  • 2 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 tsp fresh basil
  • 1/4 c feta cheese

Instructions

  1. In a large bowl, toss ingredients to combine.

Notes

Sub basil for parsley if you'd like! Refrigerates for 2-3 days.
