Let’s back up a little bit. I remember one year for the last day of school my Mom told me she was making alfredo sauce with pasta for dinner and I was totally jazzed. Instead she surprised us! She took the lid off the pot and inside were pints of ice cream. My friends were delighted and I was bummed. I LOVED- correction, LOVE- alfredo pasta sauce. Even as a small child, I preferred it over a surprise dessert for dinner scenario.

In my adulthood, I definitely do not make it as frequently as I requested it throughout my childhood. Now that I know how to make it from scratch though… things may change. I am so delighted by how simply this easy homemade alfredo sauce recipe comes together. It’s always a huge hit with everyone in our family too! I tossed it over chickpea cascatelli (a new pasta shape! check it out here) and added sauteed green peas and chopped asparagus.

Firstly, be sure to use fresh parmesan cheese. Undoubtedly, the pre-grated parmesan cheeses typically include additives that may impact the quality, taste, and texture of your homemade alfredo sauce. If pre-grated is your only route, just be sure to double check the ingredients. It’s quality is probably the most important of the alfredo sauce ingredients.
Secondly, it’s best to serve the sauce immediately, so be sure to prepare your pasta beforehand. I like mine a little al dente! The sauce takes only a few minutes to cook. If anything, you may try to boil pasta simultaneously if you’re extra talented at multi-tasking.

HOMEMADE ALFREDO SAUCE

Ingredients
- 1/2 c butter
- 2 c heavy cream
- 4 cloves garlic, minced
- 3 c parmesan cheese, freshly grated
- a pinch of salt and black pepper
Instructions
- In a large skillet over medium heat, heat garlic and butter until just melted.
- Add heavy cream, stirring until the sauce starts to simmer. About two to three minutes.
- Add grated parmesan cheese to skillet, stirring until sauce is bubbly.
- Sprinkle with a pinch of salt and black pepper. Immediately serve over pasta and enjoy!
