POLYNESIAN BANANA FANTASY

I always loved the Polynesian banana fantasy bowl at my favorite little vegetarian spot in Orlando, Dandelion Community Cafe. It’s closed now, so I decided to re-make this classic to allow it to live on. This recipe’s fresh rainbow of fruits and veggies drizzled in curry dressing is a sure-fire way to brighten my day.

This Polynesian banana fantasy bowl can be served over a bed of greens, rice, or a combination of both. I prefer to load up on spring mix with a scoop of brown rice too to make the dish hearty and filling. You could also use cauliflower rice. I love drizzling Ambitious Kitchen’s Healthy Curry Tahini Dressing over this bowl. It has just a few simple ingredients and is the perfect creaminess. Previously, I’ve used the Hope Foods Thai Coconut Curry hummus. I just watered it down a bit to make a dressing consistency. This is a great option if you have it on-hand or are in a pinch for time!

Another time saver for this Polynesian banana fantasy bowl is to buy matchstick carrots. I typically keep a 5 lb. bag of carrots in the house, so I don’t mind julienning them for this recipe. However, if julienning carrots sounds like a hassle, matchstick ones are just the same.

What makes this recipe so out-there? It’s definitely the bananas. Who adds bananas to a salad? It’s such an odd ingredient but makes me love it all the more. The raisins, bananas, and dried coconut bring a sweet twist to the traditional savory salad. However, because it does include bananas, it typically isn’t a leftover-friendly dish. The sliced bananas will begin to brown over time. If you’d like to prepare this salad for another day, I recommend tossing everything besides the bananas- just leave those for last minute!

Ingredients

  • 1 c mixed greens
  • 1/2 c brown rice, prepared
  • 1/2 cucumber, diced into quarters
  • 2 stalks celery, diced
  • 1 large carrot, julienned
  • 1/3 banana, sliced into wheels
  • 1/4 c walnuts
  • 2 tbsp raisins
  • 2 tbsp pumpkin seeds
  • 2 tbsp unsweetened shredded coconut (optional)
  • 2-3 tbsp Healthy Curry Tahini Dressing

Instructions

  1. In a bowl, combine all salad ingredients. Toss and enjoy.
