Fall is here and Iβm ready for all of the delicious recipes that come with it! Apples are one of my favorite foods, so of course Iβm going to incorporate it into as many fall dishes as I can. First up- apple spiced banana bread!

I actually first tried this recipe for Rosh Hashanah. Itβs the Jewish New Year and we customarily eat apples and honey for a sweet new year! Unfortunately my first version was just a bit too soggy and didnβt have enough apple taste for me. Version 2.0 is just in time for the changing of the seasons though! I hope you add this delicious apple spiced banana bread to your Thanksgiving table this year.

Although many consider banana bread as dessert, I firmly stand by it being a breakfast food. A sweet, indulgent breakfast food. Especially when you lay off the added sugar, which is easy when bananas are so dang sweet already. I just wanted to make that clear for you, reader. You can eat this for breakfast if it tickles your fancy, and I will too. Okay, on to the scrumptious banana bread recipe now.

A few reminders for substitutions since I am the queen of them! You can always use frozen bananas for baking. Bananas can also be substituted for apple sauce, which is especially perfect for this apple spiced recipe. Feel free to skip or substitute any warm spice- donβt have nutmeg, but have a chai spice? Sounds fabulous.

APPLE SPICED BANANA BREAD

Fall-inspired banana bread with lots of delicious apple chunks!
Ingredients
- 3/4 c and 2 tbsp whole wheat flour
- 1 c all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp coriander
- 1/2 tsp cloves
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3 ripe bananas
- 1/2 c honey
- 1/2 c melted coconut oil
- 2 eggs
- 1 apple
- 1/4 c coconut sugar
- 1 tbsp melted coconut oil (additional)
Instructions
- Preheat oven to 350°F and grease a loaf pan.
- In a small bowl, combine whole wheat flour, all-purpose flour, baking soda, baking powder, and dried spices.
- Chop half of the apple into small bite-size pieces and mix into wet ingredients.
- In a separate, large bowl, mash bananas. Mix in honey, coconut oil, and vanilla extract. Whisk in eggs.
- Slowly fold dry ingredients into wet to combine.
- Pour batter into loaf pan.
- Slice the other half of your apple thinly. In a small bowl, toss apple slices with coconut sugar, a pinch of cinnamon, and additional tablespoon of coconut oil. Lay apple slices atop batter.
- Bake for 60 minutes or until a toothpick comes out of the center dry.
