If you follow me on Instagram, you might’ve noticed my latest obsession with fridge dump salads. It’s pretty simple. I open my refrigerator and basically dump any and all ingredients into a bowl over lettuce. I’d like to say it’s completely random, but maybe I just have an adventurous palate. I like lentils with dates and sauerkraut with grapes… it’s an ideal way to add spontaneity to your meal when you’re inching towards an empty kitchen.

This week I had some prosciutto laying around from a charcuterie board and decided to pair it with some seasonal fruit. Pears and raspberries add a sweetness to salty prosciutto! I tossed in pistachios for an extra crunch and moved on to creating the perfect dressing for drizzling this pear prosciutto salad.

A sesame mustard dressing goes perfectly with any salad combination. I loved adding whole sesame seeds to this light dressing, adding even more texture to my pear prosciutto salad! I used a combination of white and black sesame seeds, but either will do.

PEAR PROSCIUTTO SALAD
Serves: 2
Prep time: 5 minutes
4 c baby kale
6 oz raspberries
1 pear, thinly sliced
3 oz prosciutto
1/4 c pistachios
For the dressing:
1/3 c olive oil
2 tbsp apple cider vinegar
1 tbsp honey
1 tbsp sesame seeds
1/2 tsp spicy mustard
1/4 tsp dried onion
1 clove garlic, minced
1. Whisk dressing ingredients in a small bowl until well combined.
2. Toss salad ingredients with desired amount of dressing. Serve immediately.
