3 BUSY GIRL BREAKFASTS FOR THE OFFICE

If you know me, you know I’m always on the go. It’s an early morning wakeup call and off to a fitness studio, to the office to crunch numbers, and home again to continue working on my blog. “On the go” is an understatement. Can you relate?

No matter how busy the morning, though, I always make time for breakfast. On busy mornings like this, when I’m in a rush, the idea of a time-intensive breakfast isn’t super realistic. These are the days I count on something quick and convenient to start my day off right.

Today, I’m partnering with Kellogg’s new Happy InsideTM Cereal—available at Tom Thumb—to share my top 3 busy girl breakfasts: meals that are portable, prep-able, delicious and nutritious!

1.      Happy InsideTM Cereal – my favorite cereal choice lately (it comes in strawberry and blueberry!). There’s no artificial colors, or flavors. Plus, it provides me with probiotics, prebiotics, and fiber all in one. It literally contains 1 billion CFU probiotics! WOAH.

2.      Egg bake – great for meal prepping! I sometimes make these in a pie dish but lately, I’ve been very into the loaf pan. I load them up with roasted veggies, any spare goodies in my fridge (think—salsa, pesto, cheese, etc.), and eggs; bake; and I’m all prepped for four days’ worth of breakfasts.

Prep time: 45 minutes

Serves: 4

Ingredients:

8 eggs

Olive oil spray

Toppings of choice

Sauté or roast your toppings… I like to use tons of greens and any other random veggies in my fridge. Lately, it’s been zucchinis and tomatoes. Spray down your loaf pan and load in the toppings. Whisk eggs and pour in over veggies. Bake at 400° for 40 minutes.

3.      Green smoothie – the easiest way to get a ton of nutrition in one drinkable cup—my favorite go-to smoothie recipe combines the benefits of healthy fats, fiber and protein for the perfect fuel.

Prep time: 5 minutes

Serves: 1

Ingredients:

1 c dark leafy greens

1/2 c nut milk

1/2 c water

1/2 frozen banana

1/3 c steamed and frozen cauliflower

1/4 avocado

1 scoop protein powder

Blend and top with your favorite fresh fruit, seeds or nuts.
