I love keeping my kitchen stocked with the most seasonal goodies. In the summer, it’s berries, green beans, corn, summer squash, the list goes on! Today I’m sharing a simple salad recipe featuring some of these seasonal summer produce items.

Justin grilled up all of our corn the other day and I’ve been using it here and there for recipes… it’s been lovely having prepared corn on hand. Aside from the corn, the only other ingredients that require cooking are the hard boiled eggs (although I purchased pre-boiled), bacon and green beans.

After I cook bacon (which can be very rare), I’m pretty prone to cooking literally anything else that I can in the bacon fat. So you can bet your bottom dollar that after I boiled my green beans, I sautéed them in some bacon fat for a finishing touch- YUM!

I was excited to use one of my favorite berries in this salad too- strawberries! Did you know that May is for boysenberries and blackberries, June is for strawberries, July raspberries and August blueberries?! The perfect touch of sweetness to this crunchy salad.

I also featured one of my favorite recipes lately in my salad- No Crumbs Left’s marinated red onions. I LOVE adding these to any meal- salad, toast, eggs- they really are magical. Plus the marinade makes for a great salad dressing as well. I drizzled it over my salad for a finishing touch.
You can also sprinkle any type of nuts or seeds atop your salad for an extra crunch. If you’ve read a few of my recipes, you’ll notice a trend- I love adding all sorts of nuts and seeds to everything and always emphasize that they are super interchangeable. Substitute pumpkin seeds with sunflower seeds or walnuts- choose your favorite! They’re all delicious and nutritious.
SUMMER MARKET SALAD
Prep time: 10 minutes
Serves: 2
1 cob of corn, grilled or boiled
2 c green beans, snipped, boiled and lightly sautéed in bacon fat
3 pieces bacon, sautéed
1 c strawberries, quartered
2 eggs, hard boiled
1/4 c No Crumbs Left’s marinated red onions
4 c butter lettuce
1 tbsp pumpkin seeds
1/2 tsp everything but the bagel seasoning (optional)
3 tbsp olive oil
1 tbsp apple cider vinegar
1/2 tsp dried oregano
- Toss all ingredients to combine. Optionally, sprinkle EBTB seasoning on eggs.
- Separately, mix olive oil, ACV and oregano in small container and drizzle as dressing.
