I’m holding onto these last few days of sweet summertime. Spending days by the pool and weekends traveling make for the perfect summer. Anywho, I’ve had this awesome popsicle tray in my cabinet for awhile now. I can’t believe I almost let summer escape without busting it out to make some homemade pops! My favorite combination for popsicles always include mixing a thick and thin consistency. I don’t want a whole pop of yogurt or coconut milk, but I also don’t want a whole pop of juice. Combining both is juuuust right. Check out these sweet layered pops and enjoy them while cooling down in that summertime sunshine.
MAUI MANGO & COCONUT POPS
Prep time: 1 hour
Serves: 4
1/3 can full fat coconut milk
1 c cold brew Maui Mango tea
1/4 c frozen mango chunks
Fill 1/3 of your popsicle mold with tea and frozen mango chunks. Freeze for about 20 minutes or until generally solid. Fill your next 1/3 with coconut milk and insert your popsicle stick. Freeze again until frozen. Lastly, pour another layer of tea to finish ’em off and freeze overnight. Enjoy!
