CANTALOUPE SUMMER SALAD

There’s one key consistency in some of my favorite summer recipes… they’re RAW. Yep, when it’s 105°F out, pretty much the last thing I want to do is turn the oven on. Cue this sweet seasonal salad. I love using quality olive oil drizzled on some fresh fruits and veggies with a little salt and pepper. I think this recipe is even better with age too. Let the ingredients soak for a few hours before enjoying if you can resist!

CANTALOUPE SUMMER SALAD

Prep time: 10 minutes

Serves: 5

1 small cantaloupe, cubed

1/2 cucumber, thinly sliced

1/4 red onion, thinly sliced

2 roma tomatoes, cut into chunks

1/2 tbsp. olive oil

salt and pepper to taste

1/2 tbsp. fresh basil

1 tbsp. fresh mint

Add all ingredients to a medium sized mixing bowl and mix thoroughly, allowing fruits  and vegetables to soak in oil. Enjoy!
