So, I went a little off the wall from my normal turkey meatballs. Let’s just say it… my turkey meatballs are usually BORING.
It’s very typical of me to mix in an egg, salt and pepper, maybe some breadcrumbs with my ground turkey and call it a day, but today was different! I grabbed some fun extras from my kitchen and got to experimenting.
I do want to make a quick note about one of my ingredients! I used this ketchup in my turkey meatballs and highly advise that you take some interest in the ingredients of your ketchup. It’s very common for high fructose corn syrup to sneak it’s way into this condiment! That and PICKLES. Okay, I’m getting off track. Alright, back to the recipe…
GLUTEN FREE TURKEY MEATBALLS
Prep time: 30 minutes
Serves: 12
1 lb ground turkey
1/2 c onion, finely chopped
1/4 c gluten free bread crumbs
2 garlic cloves, minced
1 egg
1/4 c nutritional yeast
3 tbsp ketchup
A dash of salt & pepper
1/2 tbsp parsley
Preheat oven to 400ºF. Spray a baking sheet with olive oil spray. Combine onion, bread crumbs, garlic, egg, nutritional yeast, ketchup, salt, pepper and parsley in a large mixing bowl.
Add in ground turkey and mix gently until combined. Use ice cream scooper to create balls and place on your cookie sheet.
Bake for 15 minutes, or until meatballs are browned and cooked through.
