COFFEE FAT BALLS

These balls are the perfect bite for a high fat, high protein, low sugar energy boost. Plus they happen to have a little caffeine kick too! Need I say more?

That moment when I’m in and out of our home in an instant between work and a fitness class or running errands, I find myself craving a quick snack. By filling this hunger with healthy fats and proteins, I can re-energize and fuel thru to my next activity until another meal. It’s so important to me not to fill my snacks in with empty space. Nutritious foods that will fuel me just do so much more for keeping me full than empty carbs!

These fat balls in particular though were inspired by morning workouts! When I’m rising before the sun to get a sweat in and I’m looking for something to fuel me, but still want to feel light during my workout- this is IT.

 

COFFEE FAT BALLS

Prep time: 1 hr

Serves: 18 balls

2 tsp coconut oil

1/2 c cashews

1/2 c almonds

1 c unsweetened coconut shreds

1/4 c pumpkin seeds

1/4 c flax seeds

3 dates

A hefty dash of cinnamon

2 tsp vanilla extract

2 tbsp. vanilla coffee concentrate

2 tbsp nut milk

Blend all ingredients until well combined, roll dough into 18 balls & freeze!
