CARROT BANANA BREAD

If you ask me my favorite bread, it’s always a toss up between banana and carrot. Like, how does one decide between the two!? But have no fear! We no longer have to decide!  I’ve concocted the most delicious carrot banana bread EVER. Yup, I know you’re drooling, so I’ll get down to business…

CARROT BANANA BREAD

Prep time: 1 hr

Serves: 8 slices
1 ripe banana
1/3 c coconut oil
1 chia egg (1 tbsp chia + 3 tbsp water refrigerated until gooey)
1 c nut milk
1/3 c coconut sugar
1 tsp vanilla extract
2 heaping c oat flour
3 tsp baking powder
A dash of cinnamon, nutmeg & cardamom
1 1/2 c grated carrots (about 4 large carrots, whole)
1/3 c sunflower seeds
1/3 c pumpkin seeds
1/4 c walnuts
In a large bowl, mix banana, coconut oil, chia egg, vanilla extract and coconut sugar until well combined. Add oat flour, baking powder and spices. Fold in grated carrots, nuts and seeds. Pour batter into greased loaf pan and bake for 50 minutes at 350° F.
